How to make chocolate?

Many steps are necessary to make the chocolate tablet as we know it. The first step is the harvest of the cocoa pods, the fruit of the cocoa tree. Then, it is necessary to proceed to the extraction, the fermentation and the drying of the cocoa beans. Once the drying process is complete, the beans must be crushed and roasted in order to develop all the cocoa flavors. During the grinding, the beans are gradually transformed into a liquid paste: the cocoa mass. Depending on the chocolate we want to obtain, we mix different ingredients:

  • Cocoa mass, cocoa butter and sugar for dark chocolate;
  • Cocoa mass, cocoa butter, sugar and also milk powder for milk chocolate;
  • For white chocolate, the necessary ingredients are pure cocoa butter, sugar and milk powder. There is no cocoa mass in white chocolate.

During your workshop in our chocolate museum, our chocolatiers will teach you the different steps of chocolate making in order to help you make your own chocolates, tablets and other chocolate treats. Thanks to their advice, the making of chocolate will no longer hold any secrets for you!

How does the chocolate making workshop work?

Accessible to everyone from 6 years old, participants make their own chocolate products (lollipops, mendiants, pralines, chocolate drawings…) under the eye of our chocolatier. At the end of the workshop, each participant leaves with their own chocolate production and many tips to make their chocolate treats and candies at home. The duration of our different chocolate workshops in Bruges is about 1h-1h30 in addition to the duration of the museum visit.
